The purpose of the study: to analyze the parasitic purity of fish and fish products studied in the laboratory of FSU CAC “Astrakhan” for 2015-2018.

Materials and methods. A study of 40 species of fish was conducted, 693 studies on parasitic purity were performed. The percentage of unsatisfactory samples was 4.8% (33 samples).

Research result. For research on parasitic purity were delivered fish 12 groups: herring-7.4%, sturgeon-8.4%, perch-16.6%, carp-49.5%, stavrid-0.1%, salmon-4.6%, pike-8.1%, catfish-4.0%, cod-0.3%, smelt-0.7%, mackerel-0.1%. In addition to fish products, 2 samples of seafood were delivered-0.3%.

In most cases, samples of frozen fish were delivered for research – 34.9% (242 samples). The percentage of unsatisfactory samples of frozen fish was 9.1% (22 samples). In addition to frozen and chilled fish, samples of cold and hot smoked fish were delivered for research. Thus, 7 samples (1.01%) of hot smoked fish were delivered. In all cases, the result of the study is negative.

Also, 73 samples (10.5%) of dried fish were examined, of which 2 samples (2.7%) did not meet sanitary and parasitological standards.

In addition to various fish samples, fish products and fish products were delivered for research. Thus, the caviar production was studied-55 samples (7.9%), the percentage of unsatisfactory samples was 1.8% (1 sample) – a dead larva of Anisakis simplex was found in a sample of salmon caviar (chum). In all other cases, the result of parasitological research is negative.

Summary. The most frequently positive findings were observed in frozen (34.9%) fish – metacercaria Rossicotrema donicum, Apophallus muehlingi and Posthodiplostomum cuticola and chilled (22.5%) fish- metacercaria Rossicotrema donicum and Apophallus muehlingi. In most cases (97%) in fish in the muscle and subcutaneous tissues were found metacercariae trematodes, dressed with black pigment. Metacercariae A. muehlingi were most often found in cyprinid fish (75.8%), and metacercariae R. donicum – in perch breeds (18.2%); in isolated cases – in pike (0.1%) were found metacercariae P cuticola. Metacercariae were found in predatory fish (pike perch-15.2% and ASP-12.1%), as well as fish that live at the depth of reservoirs (bream-27.3% and tench-18.2%). The presence of A. simplex larvae in the caviar of salmon fish indicates poor- quality products of this type of canned food.
